ONION CASSEROLE 
4 med. onions, sliced (Vidalia's when in season)
1/2 c. butter (1 stick)
1 can cream of mushroom soup
12 crushed saltine crackers
2 eggs
1/2 to 1 c. milk
1/2 c. grated sharp cheese
Salt and pepper to taste

Melt butter and saute onions until tender. Butter casserole dish and line with the crushed cracker crumbs. Add onions and soup in layers until full. Beat eggs and add milk, salt, and pepper.

Pour over onion mixture. Sprinkle with cheese and a few cracker crumbs. Bake at 350 degrees for 30 minutes or until brown and bubbly.
