HERBED SPINACH TARTS | |
2 c. flour 1/4 tsp. salt 2/3 c. butter 1 c. (4 oz.) shredded mild Cheddar cheese 2-3 tbsp. water 1 1/2 c. cottage cheese 1 (10 oz.) pkg. chopped spinach, cooked & well drained 1 sm. onion, finely chopped 3 eggs, beaten 1 tbsp. chopped chives 1 tbsp. chopped fresh basil or 1 tsp. dried basil 2 tbsp. grated Parmesan cheese Mix together flour and salt; cut in butter and Cheddar cheese until mixture resembles coarse crumbs. Sprinkle with water while mixing lightly with a fork; form into ball. Chill 1 hour. Preheat oven to 400 degrees. Divide dough into 12 balls. Press each ball onto bottom and sides of greased muffin pan. Mix remaining ingredients until well blended. Spoon into pastry shells, filling each cup. Bake 30-35 minutes or until crust is golden brown. Cool 5 minutes; remove from pans. Garnish with fresh herbs, if desired. Makes 1 dozen. |
