POPPYSEED CHICKEN 
1 hen or 2 lbs. chicken breasts, cooked, boned and cut into bite-size pieces
1 (8 oz.) sour cream
1 can cream of chicken soup
1 1/2 c. Ritz cracker crumbs
1 tbsp. poppy seeds
1 stick butter, melted

Place chicken in a shallow casserole. Mix sour cream and soup and pour over chicken. Mix together. Mix cracker crumbs and poppy seeds with butter. Sprinkle over top of chicken. Bake at 350 degrees for 30 minutes or until bubbly.

This can be made ahead and frozen before baking.
