KID-FRIENDLY 3-CHEESE PASTA 
1 (16 oz.) pkg. ziti noodles, cooked
1 tbsp. butter
1/4 cup crumbled bacon
4 green onions, minced
1 red bell pepper, minced
1/4 cup cheddar cheese (optional)
1/4 cup Parmesan cheese (optional)

SAUCE:

1/4 cup (1/2 stick) butter
1 cup Ricotta cheese
1 (8 oz.) can creamed corn
1/2 (10 oz.) can Rotel tomatoes
1/2 cup freshly grated Parmesan cheese
1 (6 oz.) can tomato paste

Prepare pasta according to package directions.

Meanwhile, melt 1/4 cup butter in medium saucepan. Add Ricotta cheese and next 4 ingredients. Bring to a boil then simmer for 2 minutes. Remove pan from heat. Set aside.

In another saucepan, melt 1 tbsp. butter and sauté the bacon, minced green onions, and minced bell pepper over medium heat for 5 minutes, or until tender.

In a medium bowl, mix with cooked and drained pasta.

Serve sauce over pasta. Garnish with remaining cheeses, if desired.

Serves 4.
