FINNISH PULLA (Coffee Cake) 
Soak 1 package active dry yeast in 1/2 cup warm water. Add 1 teaspoon salt, 1 teaspoon cardamom, 1 cup sugar and 2 cups milk which has been scalded and cooled to lukewarm.

Add 4 beaten eggs and about 5 cups flour and beat. Add 1/2 cup melted butter, then about 5 more cups of flour, just enough to make a dough stiff enough to handle. Let rest for 5 minutes and knead. Let rise, punch down and let rise again. Shape into desired forms.

There are several ways to shape pulla. Three long rolls of dough laid around each other and turned up ends make a "bishop's wig". Also braids are easy to make. Glaze with beaten egg. Let rise until puffy but not double in bulk--25 to 30 minutes. Bake in 375 degree oven 25 to 30 minutes.
