FRIED FISH FILLETS | |
1 - 1 1/2 c. yellow cornmeal 1/2 tsp. salt, or to taste 1/2 tsp. pepper, or to taste Peanut oil (3" deep in heavy skillet) Fish fillets Heat oil until very hot. Mix dry ingredients on waxed paper. Coat both sides of fillets with cornmeal. Fry a few fillets at a time. Turn once. When the fillet floats, it is done. Do not overcook. |
