SPAGHETTI SQUASH WITH TOMATO
SAUCE
 
1 spaghetti squash
1 1/2 c. spaghetti sauce or tomato sauce
1/2 c. grated Parmesan cheese

Cut squash in half lengthwise. Put halves cut side down, on a large microwaveable plate. Prick the skin all over with fork. Microwave on high until skin yields to pressure, 10-15 minutes. Microwave the sauce on high 3-5 minutes. With fork, scrape out the strands of squash. Top with sauce and cheese. 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
