GREEN TOMATO RELISH 
1 peck green tomatoes (14 lb.)
2-3 peppers or mangos (if you don't have red or yellow, then use 2-3 carrots for color)
8 lg. onions

Stem and cut up tomatoes, seeded peppers (or carrots) and onions. Grind these vegetables (using the grind position on a blender). Place in 2 enamel containers - sprinkle with 1 cup table salt (no iodine) for each container. Let stand overnight. Drain well. Add to boiling liquid consistency of: 2 c. water 1/2 c. celery seed 1/2 c. mustard

Add granulated sugar 10-15 cups or more. This liquid mixture is for 1/2 peck - ingredients. I like tart or sweet/sour to taste therefore I add sugar to suit my taste. Boil for at least 1/2 hour, store in pint jars that have been in very hot water long with the lids.
