Clean defrosted duckling inside and out. Remove any pin feathers. Remove wing tips and discard. Stuff duckling with unpeeled apple slices and washed prunes. Fill cavity and close opening. Remove most of neck skin, leaving enough to hold several slices of apples and prunes. Season out side of duckling with generous sprinkling of salt and pepper. Prick skin in several places so fat drains out. Cook in covered roaster on a rack. Pour off duck fat as it accumulates.
Bake in 325 degree oven for 1 1/2 to 2 hours until very tender and browned. Add water to pan so juices don't burn. Drippings make excellent gravy.
