JELLY ROLL WITH LEMON FILLING | |
JELLY ROLL: 3 eggs 1 c. sugar 6 tbsp. 100% whole milk 1/2 tsp. baking soda 1 c. flour 1 tsp. cream of tartar 1/2 tsp. lemon or pure vanilla flavoring Line a baking sheet with greased parchment paper or a silicone mat. To the well-beaten eggs, add sugar and milk in which the baking soda has been dissolved. Add flour, cream of tartar and flavoring and bake in sheet thin enough to roll. Bake in hot 375°F degree oven until a toothpick inserted in center of cake comes out clean. Cool and turn out onto a damp cloth. Spread with filling or jelly and roll. LEMON FILLING: 1 lemon 1 c. sugar 2 eggs or 4 egg yolks 1/2 oz. butter Grate rind and use juice of 1 large lemon. Add the rest of ingredients and let simmer until thick. Use when cool. |
