JELLY ROLL 
12 egg yolks
1 whole egg
1 1/2 c. sugar
1/2 c. water
2 c. sifted cake flour
2 tsp. baking powder
Dash of salt
Powdered sugar
Any jelly or filling

Line 2 (15 x 10 inch) pans with greased waxed paper. Preheat oven to 400 degrees. Beat yolks and egg until thick and lemon colored. Beat in sugar gradually until fluffy; add water and stir lightly. Fold in gradually the flour which has been sifted with the baking powder and salt. Pour in pans and bake 12-15 minutes. Loosen edges and immediately turn upside down on towel sprinkled with powdered sugar. Pull off paper carefully; spread with jelly while hot. Roll and wrap in towel until cool.

CLEAR LEMON FILLING FOR JELLY ROLL:

1 c. sugar
5 tbsp. cornstarch
1/2 tsp. salt
2 tbsp. butter
1 c. water
2 tbsp. grated lemon rind
1/2 c. lemon juice
2 eggs

Mix together. Bring to rolling boil, stirring constantly. Boil 2 minutes. Chill before using. Double recipe for 2 jelly rolls.
