MERINGUE JAM COOKIES (RUSSIAN) | |
1/2 cup butter 1/3 cup sugar 2 egg yolks 1/2 tsp. vanilla 1/4 tsp. grated lemon rind 1 cup sifted flour 1/3 tsp. salt Jam or Jelly, for spreading Blend until creamy: 1/2 cup butter and 1/3 cup sugar. Then beat in 2 egg yolks, 1/2 tsp. vanilla or almond extract, 1/4 tsp. grated lemon rind, 1 cup sifted flour and 1/3 tsp. salt. Chill dough for several hours. Roll until very thin; cut into oblongs, 1x2 inches. Spread with tart jam or jelly. Cover with meringue. Meringue: 1 egg white 5 tbsp. sugar 1 tsp. cinnamon 6 tsp. nut meats, chopped Whip 1 egg white until stiff, then adding 5 tbsp. sugar very slowly, beating constantly. Fold in 1 tsp. cinnamon and 6 tbsp. chopped nut meats. Bake on greased cookie sheet at 350°F. for 12 min. Makes 5 dozen. Submitted by: CM |
