CHICKEN WITH VEGETABLES 
1 chicken, cut in pieces
1/2 c. onion
1/4 c. green pepper
1 clove garlic, minced
4 baking potatoes, sliced (skin on or off)
15 baby carrots
1/2 c. wine

Brown chicken in Dutch oven (skin on or off, depending on individual taste). Remove chicken and add chopped onion, green pepper and garlic. Saute until lightly browned. Add potatoes and carrots and saute until glazed. Put chicken back in Dutch oven, add 1/2 cup wine. (Remember, alcohol cooks out of the dish!) Whether you use white or red wine is a matter of taste. Cover and simmer for 1 to 1 1/2 hours, or until chicken and potatoes are done. During cooking, carefully stir mixture so all chicken and vegetables are cooked evenly. May need to add more wine toward end of cooking time (if you do, be sure to cook a little longer!)
