GREEN BEAN SOUP | |
4 c. beans, cut 1/4 inch-1/2 inch 4 c. potatoes, cubed 8 c. water 1 carrot, cut into sm. pieces (optional) 1 tbsp. cornstarch or flour mixed in water 1 tbsp. salt 1/4 tsp. pepper 1 c. sour cream mixed in 1 c. milk (or 2 c. milk or 2 c. Half and Half) Cook beans and potatoes until tender. Add cornstarch mixture to thicken. Take off heat and add milk and sour cream. Simmer a few minutes. |
