CHICKEN - RICE CASSEROLE 
1 chicken, boiled & cut up
1 box UNCLE BEN'S® long grain & wild rice (use both packets)
1 onion, chopped
1/2 c. chopped celery
2 can cream of chicken soup
1 can water chestnuts, sliced
3/4 c. mayonnaise

Mix all together and cover in a casserole baking dish and let refrigerate overnight. Top with crushed potato chips before baking. Bake, covered, for 30 minutes and another 30 minutes uncovered. Bake at 350 degrees.
