POTATO PUDDING CASSEROLE 
6 lg. Irish potatoes
1 onion, grated
3 eggs, well beaten
1 c. hot milk
6 tbsp. melted butter
1 1/2 tsp. salt
1/4 tsp. pepper

Peel and grate potatoes and onion. Can be done in food processor or blender. Add milk, eggs, butter, salt and pepper. Pour mixture into buttered pan (about 7 x 12 inch). Bake in preheated oven for 1 1/2 hours at 375 degrees. (The last half hour sprinkle top of casserole with grated Cheddar cheese if desired.) Serves 6-8.
