HOT CAKE 
6 to 8 eggs
2 c. self rising flour
1 tsp. almond extract
4 tbsp. soft butter
3 c. sugar
2 c. water
Red vegetable coloring

Preparation: Separate egg yolk and egg white in two different bowls. Add 1 cup sugar, butter, almond extract to egg yolk, beat at medium high speed until soft. Add flour 1/2 cup at a time and continue to beat until smooth.

Clean and beat egg white at high speed until foamy, add 1 cup sugar slowly and continue to beat until creamy.

Add the egg white to flour with a spatula and fold in. Add red food coloring. Pour on a greased baking pan.

Bake at 350 degrees for 30 to 35 minutes. Pour 2 cups water in a pan, add 1 cup sugar and boil as it starts to thicken add 1/2 cup rum or brandy. Keep stirring until it thickens.

Once cooled cake is removed from baking pan, prick with a fork; then pour syrup on top surface. Frost and decorate.
