STREUSEL COFFEE CAKE 
2 c. Aunt Jemima Original Pancake and Waffle Mix
1/2 c. sugar
1 1/4 c. milk
1/4 c. vegetable oil
1 egg, beaten

STREUSEL:

1/2 c. Quaker Oats (quick or old fashioned, uncooked) or chopped nuts
1/4 c. firmly packed brown sugar
1/2 tsp. ground cinnamon
2 tbsp. butter, melted

Heat oven to 350 degrees. Grease 13 x 9 inch baking pan. Combine pancake mix and sugar. Add milk, egg and oil; mix just until moistened. Spread into pan. Combine streusel ingredients; sprinkle over batter. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Serve warm. To reheat cooled cake, microwave each serving at High about 15 seconds.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I used generic pancake mix from Walmart. I added 1 cup of frozen blueberries after the batter was poured in the pan. It was awesome even after it was cooled down and not reheated. This recipe is a keeper.
