HERBED TURKEY LEFTOVERS 
1 to 1 1/2 lb. cooked turkey, chopped into small pieces
4 tbsp. olive oil
1/2 medium onion, diced fine
2 to 3 cloves garlic, chopped fine or minced
1/2 tsp. ground oregano
1/8 cup dried parsley
salt and pepper, to taste

Heat oil. Sauté onion, garlic, oregano and parsley until onions are tender. Add chopped turkey. Heat thoroughly, stirring occasionally. If your meat is a little dry, add water just to cover and simmer until water has mostly evaporated.

Serve over steamed rice with a side vegetable (canned green beans go great).
