SAUSAGE RING WITH CHEESE -
SCRAMBLED EGGS
 
6 eggs
3/4 c. milk
3/4 c. crushed saltine crackers
1/2 c. chopped peeled apple
1/8 c. chopped onion
1 lb. pork sausage
1 1/2 tbsp. butter
1 1/2 tbsp. all-purpose flour
1/2 c. cream style cottage cheese
Pepper
1/4 tsp. salt

Beat together 1 egg and 1/4 cup milk. Stir in cracker crumbs, apple, onion and 1/8 teaspoon pepper. Add sausage; mix well. Firmly pat meat mixture into ring shape onto a shallow baking pan. Bake in 350 degree oven for 50 minutes. Transfer to a platter and keep warm.

Meanwhile, in 2 quart saucepan, melt butter. Blend in flour. Add remaining milk all at once. Cook and stir over medium heat until bubbly. Cook and stir 2 minutes more.

Beat together the remaining eggs, cheese, salt and pepper. Stir into sauce. Cook, stirring frequently, until eggs are firm but moist. Spoon eggs into center of sausage ring. Serves 6.
