HOLIDAY BREAD 
2 c. flour
1 1/2 c. sugar
2 tsp. baking soda, salt & cinnamon
2 (7 1/2 oz.) jars jr. size baby food carrots
1/2 c. salad oil
4 eggs, well beaten
1/2 c. chopped nuts

Combine flour with sugar, soda, salt and cinnamon in mixing bowl; blend well. Add carrots, oil and beaten eggs; mix well. Stir in nuts. Pour batter into 2 greased pans, lightly floured (8 1/2" x 4 1/2" x 2 1/2") loaf pan. Bake at 375 degrees for 55 to 60 minutes. Test with wooden pick. Remove from pan and cool on wire rack. Yield: 2 loaves.
