TURKEY CROQUETTES 
1/4 c. butter
1/4 c. flour
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. nutmeg (optional)
1 tsp. minced onion
1 c. milk
2 tsp. Worcestershire sauce
1/2 c. flour
1 3/4 c. bread crumbs
1 egg, slightly beaten
2 c. cooked turkey
Vegetable oil

Melt butter in large saucepan. Stir in flour, salt, pepper, nutmeg, and onion. Slowly add milk and Worcestershire sauce. Cook over medium heat, stirring constantly, until thick and bubbly. Remove from heat. Blend in 1 cup bread crumbs and turkey. Shape into 8-10 croquettes. Roll each lightly in flour; dip in egg and roll in bread crumbs. Fry in 1 inch of oil until golden brown.
