LAMB CROQUETTES 
2 c. ground lamb
2 tbsp. green pepper
1 tbsp. onion
1 can cream of tomato soup
1 egg
Bread crumbs
Vegetable oil

Mix first 4 ingredients together and refrigerate. Cut into squares into 8 croquettes. Beat egg in 2 tablespoons of water. Dip croquettes in egg, then crumbs. Fry in hot vegetable oil at 375 degrees a few at a time until golden brown. 4 servings.

I just LOVE Lamb Croquettes made with Ground up Lamb. My family used to have a leg of Lamb once a month. We used to cut left over Lamb off the leg and grind it up for the Croquettes. It was my job to grind up the Lamb with a hand cranked meat grinder. The Croquettes are Pure HEAVEN!
