VEGETABLE CASSEROLE 
2 (10 oz.) boxes frozen mixed vegetables
1 c. celery, chopped
1/3 c. onion, chopped
1 c. mayonnaise
1 c. grated Sharp cheese, divided
Salt & pepper to taste
2 c. Ritz crackers, crushed
1 stick butter, melted

Cook vegetables according to directions on box; drain well. To vegetables, add celery, onion, mayonnaise, 1/2 cup cheese, salt and pepper. Put in casserole dish. Sprinkle remaining 1/2 cup cheese on top. Mix cracker crumbs with melted butter. Spread on top of casserole. Bake until brown at 300 degrees for 30 to 40 minutes.
