SUMMERTIME DELIGHT PEACH COBBLER | |
4 tbsp. (1/2 stick) butter 1 cup sugar 1 tbsp. cornstarch 1/2 tsp. cinnamon 1/4 tsp. allspice 3/4 cup water 1/4 cup sherry 8 to 10 fresh peaches, skinned and halved 2 tbsp. lemon juice 1/2 cup chopped pecans Preheat oven to 375°F. Melt butter and pour into oblong 2-quart baking dish. Distribute butter evenly on bottom and sides of dish. Combine sugar, cornstarch, cinnamon, allspice, water and sherry. Bring to a boil; boil for 1 minute, stirring constantly. Dip fresh peaches in boiling water quickly. Remove skins; cut in halves; remove stones. Arrange peach halves in baking dish. Sprinkle with lemon juice. Sprinkle nuts on top. Pour cooked liquid over peaches. BATTER: 1/4 cup sugar 2 cups Bisquick baking mix 1 egg, slightly beaten 1/2 cup milk 1/2 tsp. almond flavoring Mix sugar with baking mix, egg, milk and almond flavoring. Stir just enough to moisten. Drop batter by spoonfuls around edge of baking dish. Bake at 375°F for 25 to 30 minutes. Serve warm or cold, with vanilla ice cream or whipped cream, if desired. Serves 8 to 10.
