APPLE STREUSEL MUFFINS 
1 1/2 c. flour
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. cinnamon
1/4 tsp. salt
1/8 tsp. nutmeg
1 c. pared, shredded apple
1/2 c. milk
1/4 c. vegetable oil
1 egg, beaten

STREUSEL TOPPING:

1/3 c. packed brown sugar
2 tbsp. flour
1/2 tsp. cinnamon
2 tbsp. butter
1/3 c. chopped pecans

In a medium bowl combine flour, sugar, baking powder, cinnamon, salt and nutmeg. Stir in apple. Mix milk, oil and egg until blended. Add to dry ingredients. Stir just until moistened.

STREUSEL; Mix brown sugar, flour and cinnamon together. Cut in butter until crumbly. Stir in chopped pecans.

Spoon half of batter into muffin tins (greased or lined). Sprinkle with 1/2 topping and top with remaining batter, then remaining streusel topping. Bake at 350 degrees for 20 minutes.
