APPLE OATMEAL MUFFINS | |
1 1/4 c. whole wheat flour 1 c. quick-cooking rolled oats 2 tsp. baking powder 1 tsp. baking soda 1 1/2 tsp. cinnamon 2 lg. egg whites 1 c. frozen, unsweetened apple juice concentrate, thawed 2 c. chopped apples 1. Combine flour, oats, baking powder, baking soda, and cinnamon. 2. In separate bowl, combine egg white, apple juice concentrate and chopped apples. 3. Add liquid mixture to dry ingredients, blend until just moistened. 4. Divide batter into 12 muffin tins that have been sprayed with non-stick vegetable coating. 5. Bake at 350 degrees for 20 to 25 minutes. |
