APPLE OATMEAL MUFFINS | |
1 1/4 c. whole wheat flour 1 c. quick-cooking rolled oats 2 tsp. baking powder 1 tsp. baking soda 1 1/2 tsp. cinnamon 2 lg. egg whites 1 c. frozen unsweetened apple juice concentrate, thawed 2 c. chopped apples Combine egg whites, apple juice concentrate and chopped apples. In separate bowl, combine flour, oats, baking powder, baking soda and cinnamon. Add liquid mixture to dry ingredients; blend until just moistened. Divide batter into 12 muffin tins that have been sprayed with nonstick vegetable coating. Bake at 350 degrees for 20 to 25 minutes. Yield: 12 muffins. 1 Muffin = Calories 129, % Fat Trace, Protein 3, Cholesterol 0, Fat Trace, Carbohydrate 28, Sodium 135. |
