KONA COFFEE CRISPIES | |
1/2 c. flour, sifted before measuring 1 tsp. salt 1 tsp. baking soda 1 c. shortening 1 c. (firmly packed) brown sugar 1 c. sugar 2 eggs 1 tsp. vanilla 4 tsp. Kona coffee (instant) 1 1/2 c. oatmeal 1/2 c. chopped nuts Preheat oven to 350 degrees. Sift flour, salt and soda together. Cream shortening and sugars. Add eggs and vanilla. Blend. Add instant coffee; mix well. Blend in flour mixture a small amount at a time. Fold in oatmeal and nuts. Shape dough into rolls about 2 inches in diameter. Wrap in wax paper; chill until firm. Slice to 1/4 inch thickness. Bake on ungreased cookie sheet for 10-12 minutes. |
