SWEET POTATO CASSEROLE 
4 c. sweet potatoes, mashed
1 stick butter, melted
1 tsp. vanilla
1 c. coconut
1 c. sugar (I use less because it is real sweet, 1/2 c.)
2 eggs, well beaten

Mix ingredients well. Grease 13 x 9 inch pan and place mixture in pan.

TOPPING:

1 c. brown sugar
1/2 c. butter
1/2 c. chopped pecans

Mix and sprinkle on top. Bake at 350 degrees until brown (30-35 minutes).
