SHRIMP CASSEROLE 
2 lb. shrimp
1 stick butter
1 onion, chopped
1 bell pepper, chopped
2 c. Minute Rice (raw)
1 can cream of mushroom soup
1/2 can Rotel tomatoes (whole can if you want it REAL hot)
1 box Lipton Onion Soup Mix

Saute onion and bell pepper. Take one package of onion soup mix and mix as directed on box. Take all ingredients and mix together. Bake at 350 degrees for 30 or 40 minutes.

Recipe can be increased to 4 cups of rice and use same amount of mixture.
