RANGER'S ZUCCHINI FRITTERS 
3 c. zucchini, shredded
1/2 c. unbleached flour
1 clove garlic, chopped
2 eggs, slightly beaten
1 tsp. baking powder

Mix all ingredients and heat oil in pan or kettle. Drop by tablespoon and brown on each side. Sprinkle with Parmesan or Romano cheese.
