FROZEN AMBROSIA | |
1 (8 3/4 oz.) can pineapple tidbits 3 tsp. lemon juice 1 envelope Knox gelatin 1 (3 oz.) cream cheese 1/3 c. mayonnaise 1 c. miniature marshmallows 1 c. sliced banana 1 (11 oz.) can mandarin oranges 1/2 c. maraschino cherries 1/2 c. walnuts, chopped 1 c. heavy cream Line a 9x5 inch loaf pan with 2 strips of waxed paper. Drain the pineapple but save liquid. Pour 3 teaspoons lemon juice into 1 cup measure. Add enough pineapple liquid to make 1/2 cup. Pour liquid into saucepan, add gelatin, heat until dissolved. Put softened cream cheese, mayonnaise in bowl and beat until smooth. Now add pineapple, marshmallows, banana, orange sections, cherries and walnuts. Mix and now add gelatin mixture. Place bowl of fruit and gelatin into larger bowl filled with ice water. Let stand 20 minutes or until stiff. Mix and whip heavy cream in chilled bowl. Fold the heavy cream into the fruit gelatin mixture until combined. Spoon into 9x5 inch pan, packing firmly. Cover with plastic and freeze for 4 hours. To serve, turn onto platter. Remove wax paper and slice. |
