FRESH ORANGE CAKE 
2 1/4 c. flour
1 1/3 c. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 c. shortening
1 tsp. grated orange rind
Add enough water to juiced to make one c. liquid
2 eggs
1 tsp. vanilla

Sift dry ingredients together. Add shortening, juice and water and grated peel. Beat in eggs, add vanilla. Bake 25 minutes, or until done, in 2 layer cake pans. 9 inch. Or bake in oblong pan. 1 cup coconut can be added to dough for orange-coconut cake.

FROSTING:

1 lb. powdered sugar
2 tbsp. butter

Mix with small amount of orange juice to frosting consistency. Will frost top and sides of 2 layer cake.
