ST. LUKE'S VEGETABLE SAUCE 
1/2 chopped onion
1 clove garlic
1 tsp. olive oil
2 c. tomato sauce
Oregano to taste
Basil to taste
Red hot pepper flakes
1 c. zucchini, chopped
1/2 c. mushrooms, chopped
1 sm. green pepper, chopped
2 tbsp. (1%) lowfat cottage cheese
1 tbsp. Parmesan cheese

Brown onion and garlic in olive oil. Add tomato sauce and herbs. Add vegetables and simmer until soft. Stir in lowfat cottage cheese. Mix with pasta (use 1 1/2 cups of pasta per serving) and top with Parmesan cheese. Serves 2. 151 calories per serving.
