MINI CHEESE CAKES 
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
24 vanilla wafers
1 (21 oz.) can cherry pie filling or other desired pie filling

Beat softened cream cheese, sugar, eggs, lemon juice, and vanilla until blended. Place 1 cookie in each of 24 paper lined muffin pans. Spoon. Cream mixture over cookie. Bake in 375 degree oven 15 to 20 minutes or until set. Chill. To serve, top with a spoonful of cherry pie filling. 24 servings.
