Keebler Vanilla Wafers
2 (8 oz.) pkgs. cream cheese
3/4 c. sugar
2 eggs
1 tsp. vanilla
2 tsp. lemon juice
1 can cherry pie filling

Place a vanilla wafer in bottom of a mini foil cup (the mini-muffin size). Beat remaining ingredients together, except for the cherry pie filling. Pour in wafer lined cups.

Bake on a cookie sheet 15 minutes at 375 degrees. They rise during baking but "fall" enough during cooling to make room for the filling. Cool and top with cherry pie filling or any other fruit topping. Makes 36.
