QUICK AND EASY MINI CHEESE CAKE 
3 (8 oz.) pkgs. cream cheese
5 eggs
1 c. sugar
1/2 tsp. vanilla

TOPPING:

1 c. sour cream
1/4 c. sugar
1/2 tsp. vanilla

Mix all ingredients together. Fill foil baking cups 1/2 full. Bake at 300 degrees for 30 to 40 minutes. Remove. Allow to set for 10 minutes. Top each with sour cream topping. Individual cakes may additionally topped with blueberry, apple or cherry pie filling.
