GREEN PEPPERS STUFFED WITH
SHRIMP
 
3 onions, chopped
1/2 c. chopped celery
1/2 c. chopped green pepper
1 clove garlic, pressed
1/4 lb. butter
2 lbs. peeled, raw shrimp
3 1/2 c. dry French bread crumbs
1/2 tsp. cayenne
Salt & pepper to taste
6 green peppers, halved, seeded & scalded
2 tbsp. butter

Saute onions, celery, chopped pepper and garlic in butter until wilted. Add shrimp, stirring only to mix. Cover and cook very slowly for 15 minutes. Reserve 1/2 cup bread crumbs, adding remainder to seafood mixture. Add up to 1/2 cup water if necessary. Season to taste. Stuff into pepper shells and sprinkle with reserved bread crumbs. Dot with additional butter and bake at 300 degrees for 15 minutes.
