SHRIMP STUFFED PEPPERS 
4 ribs celery, finely chopped
4 green onions with tops, finely chopped
1 med. onion, finely chopped
Tops from 7 peppers, finely chopped
2 cloves garlic, finely chopped
1/3 c. vegetable oil
2 lbs. cooked, peeled, deveined shrimp
1/2 loaf stale French bread
7 bell peppers
1/2 to 3/4 c. bread crumbs
Liquid butter

Saute first 5 ingredients in 1/3 cups vegetable oil until slightly brown. Add 2 pounds shrimp cut in small pieces. Simmer until vegetables are soft. Soak the bread which has been broken into pieces with water. Squeeze out excess water and add to shrimp and vegetables. Par boil bell peppers 10 minutes. Stuff with shrimp, bread, and vegetable mixture. Top with bread crumbs and a small drizzle of butter. Place in oven at 325 degrees for 30 to 45 minutes.
