STUFFED PEPPERS & SHRIMP 
6 bell peppers
1 tbsp. butter
1/4 tsp. minced onion
1/2 c. mushrooms
2 tbsp. tomato, chopped
1 tsp. salt
Bread crumbs
1/2 tsp. minced parsley
1 lb. boiled, deveined shrimp

Cut off top of peppers. Heat butter, add onion and the tops of peppers and let simmer until tender. Add mushrooms and let simmer until tender, add chopped tomato, salt, parsley and shrimp.

When all is heated through, sprinkle in the bread crumbs. Fill the peppers; put a pat of butter on each and bake about 10 minutes or more, or until done. Put a little water in pan when baking peppers.
