SHRIMP - STUFFED PEPPERS | |
1/4 c. uncooked rice 1/2 c. water 1/4 tsp. salt 2 med. sized green peppers, cored & seeded 1 (4 oz.) can shrimp, drained & rinsed 1/3 c. mayonnaise 1 tbsp. onion, chopped 2 drops hot sauce 2 tbsp. cracker crumbs 1 tbsp. butter, melted Combine rice, water and salt in saucepan, bring to a boil. Cover, reduce heat and simmer 17 to 20 minutes. Remove from heat, set aside. Cook green peppers in boiling salted water 5 minutes, drain. Set aside 2 shrimp. Combine, rice, remaining shrimp, mayonnaise, onion and hot sauce; mix well. Spoon into peppers, place in an 8 1/2 x 4 1/2 x 3 inch loaf pan. combine cracker crumbs and butter; mix well. sprinkle on peppers; bake uncovered at 350 degrees for 30 minutes. Garnish with reserve shrimp. Yield: 2 servings. Easy to double. |
