CORN PUDDING | |
A different way to serve good old corn. 10 to 12 ears white corn (may substitute two 10 oz. pkg. frozen white corn) 1/4 c. all-purpose flour 1 tbsp. sugar 1 tsp. salt 1/4 tsp. pepper 3 dashes cayenne pepper 2 c. light (coffee) cream 4 tbsp. (1/2 stick) butter, melted 3 eggs, well beaten Grease a 1 1/2-quart baking dish. Cut corn from ears. (If using frozen corn, thaw and drain in colander.) Puree 1/2 of corn in blender for 4 seconds. Combine pureed corn with whole corn in large bowl. Add flour, sugar, salt, pepper and cayenne. Mix in cream, butter and eggs. Pour into prepared baking dish. Set dish into another pan; fill larger pan with hot water to a depth of 1 inch. Bake, uncovered, at 350 degrees for about 1 hour and 10 minutes or until toothpick inserted in center comes out clean. Serve hot. Serves 6 to 8. Preparation: 15 minutes. Baking: 1 hour, 10 minutes. Temperature: 350 degrees. |
