CREAM RICE PUDDING 
1/2 c. uncooked regular rice
1 qt. milk
1/2 tsp. salt
1/2 c. sugar
2 eggs
1 1/2 tsp. vanilla

Pour boiling water over rice. Let stand for not less than five minutes. Heat milk to near boiling. Drain rice well. Add to hot milk. Simmer for 25 minutes. Stir occasionally. Remove from heat and add salt, sugar, eggs (which have been beaten well) and vanilla. Mix slightly until thickened. Pour into bowl. Cool. Sprinkle with nutmeg.
