CATRIONA CREAM RICE 
1/2 c. uncooked rice
1 1/2 c. water
2 eggs
2 c. milk
1/2 c. sugar
1/2 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1 tsp. vanilla

Cook rice in water over low heat until tender. Cool and transfer to a buttered casserole. Beat eggs, milk, sugar, salt and flavorings together. Fold into rice and bake 1 hour at 325 degrees.
