ZUCCHINI - STOVE TOP CASSEROLE 
1 zucchini
2 onions
1 c. shredded carrots
1 can cream of chicken soup
1 c. sour cream
1 c. Stove Top stuffing
1 stick butter, melted

Slice the zucchini and onions. Cook for 5 minutes in a little melted butter. Drain to remove all juice. Mix soup with sour cream. Mix stuffing and butter; spread half on bottom of baking pan. Layer the 3 vegetables and the soup/sour cream mix. Place remainder of stuffing and butter on top. May cover with grated cheese. Bake at 350 degrees for 40 minutes.
