CORN SOUP 
1 tbsp. butter
1 clove garlic, minced
1 sm. onion, chopped
3 med. tomatoes, peeled seeded and chopped
4 c. beef broth
1/2 tbsp. dried oregano
1/2 tsp. salt
1 1/2 c. corn kernels
1/2 c. evaporated milk

Saute garlic and onion in butter until onion is tender, not browned. Add tomatoes, simmer 10 minutes. Add broth, oregano, salt and half the corn, puree whole mixture, then add remaining corn. Simmer whole mixture 30 minutes. Add evaporated milk, heat and serve. Serves 4.
