VERY MOIST CHOCOLATE CAKE 
2 cups all-purpose flour
2 cups sugar
3/4 cup cocoa
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 cup oil
1 cup boiling water
1 cup milk
2 eggs, beaten
1 tsp. vanilla

Preheat oven to 350°F. Grease and flour two 9-inch round pans.

Mix ingredients together in a large bowl. Make sure water is boiling; batter will be thin.

Pour into prepared pans and bake at 350°F for 30 to 35 minutes. Frost as desired.

Finally a chocolate cake that stays moist after its cooled off! This will be my "go to" chocolate cake from now on. I live alone so I just halve the ingredients and make one 8-inch round pan cake. I don't even frost it (maybe some whipped cream now and then). Great recipe!

Definitely a keeper! Moist as what the title indicates. Easy to whisk, no machine required. Guest coming over, no sweat... Baked this as dessert. My only adjustment is to make the chocolate flavour more dominant.

I have been in the mood for chocolate cake for the last few days. I finally went into the net to find a good recipe so that I could make one. I am notorious for modifying recipes, and my stuff always comes out really great, so here are the changes I made:

Flour: 1 cup white wheat flour / 1 cup white rice flour
Sugar: 1 cup raw sugar / 1 cup coconut sugar
Oil: 1 cup refined coconut oil (much like Crisco only healthy)
Milk: 1 cup plain Kefir (Lifeway)

All else the same.

Lite, flavorful, and simply delicious!!!! :)
