VEGETABLE BARS OR VEGETABLE
PIZZA
 
2 tubes crescent roll mix
3/4 c. mayonnaise
1/2 c. sour cream
16 oz. cream cheese (I have used less & it turns out fine)
1 env. Ranch dressing
3/4 c. each of the following: chopped green pepper, broccoli, cauliflower, shredded carrots, grated cheddar cheese, diced tomatoes & scallions

I use "lite" mayonnaise, sour cream, cream cheese, Ranch dressing.

Cover bottom of 11 x 17 inch jelly roll pan or 2 (9 x 13 inch) pans with crescent roll dough and stretch dough to fit pan(s). Bake 7 to 8 minutes at 350 degrees or until lightly browned. Mix mayonnaise, sour cream, cream cheese and Ranch dressing. Spread over cooled dough.

Mix first 4 ingredients and spread evenly over cheese mixture. Spread scallions, tomatoes and then cheese over vegetables. With a piece of waxed paper laid over top - press lightly to press vegetables into cheese mixture. Chill and cut into bars.

What I do: I spread each vegetable separately, they are more evenly distributed that way. I use a cup of broccoli, cauliflower, tomato and cheese, a mixture of red and green peppers, using the amount called for and scallions to suit taste. It is important to use scallions. They aren't as strong as regular onions. I use the green tops. Enjoy! and listen to the compliments.
