ELEPHANT EARS
1 1/2 c. milk
1 tsp. salt
2 pkgs. dry yeast
Oil for frying
2 tbsp. sugar
6 tbsp. shortening
4 c. flour

SUGAR MIXTURE:

1/2 c. sugar
1 tsp. cinnamon

Heat together but do not boil, milk, sugar, salt and shortening until melted. Cool mixture to lukewarm. Add yeast, stir until dissolved. Stir in flour, 2 cups at a time, beating until smooth. Place in greased bowl; cover with damp cloth. Let rise until doubled, approximately 30 minutes. Heat oil until 350 degrees. Dust hands with flour. Pinch off pieces of dough about the size of a golf ball. Stretch dough pieces into a thin 6" to 8" circle. Drop this into oil. Fry until it rises to surface, turn and fry other side until golden. Remove, drain and sprinkle with sugar mixture.
